Christ and the apostles did not explicitly say Christianity is the fulfillment of Judaism. However, we can say Jesus completed the Jewish religion by serving as the Messiah (Christ) whom the prophets had long foretold. Therefore, it follows that the completed form of the Jewish religion is known as Christianity, and its adherents are Christians or 'followers of the Christ.'

Gal 3:16 Now to Abraham and his seed were the promises made. He saith not, And to seeds, as of many; but as of one, And to thy seed, which is Christ.

The jewish prophets described the messiah as the political and economic savior of the Jewish nation. Jesus fulfilled neither. It took almost 2,000 years before finally the UN gave Israel its state back. Understandably, the Jews dont recognize him as messiah.
